So pretty. So delicate. So delicious. Served along side warm garlic bread and a simple salad of leafy-lettuce with tomatoes, this makes for one romantic supper or impressive supper when company comes a calling. I love pasta dishes for entertaining. Maybe that’s just the romantic in me – imagine a table set in the middle of a vineyard – friends gathered round just as the sun begins to set. In the twilight of the evening, we break the bread and let the lively conversation begin. Laughter and love floating in the air, dancing together, intertwined as one. Oh, life is good under a Tuscan sun.
Angel Hair Pasta with Shrimp in White Wine
¼ Cup Olive Oil, divided
½ lb Angel Hair Pasta
1-2 Cloves Garlic, Chopped
1 lb Large Shrimp, peeled, deveined, tails removed
2 (14.5 oz each) Cans Italian-Style Diced Tomatoes, drained
½ Cup White Wine
¼ Cup Chopped Italian Parsley
6-8 Basil leaves, chopped
3 Tablespoons Parmesan Cheese, grated
Peel shrimp. Devein if necessary and remove tails. Rinse and set aside until ready to use.
Peel and chop garlic, set aside until ready to use.
Chop parsley and basil, set aside.
In a large stock pot, bring lightly salted water to a boil. Add 1 tablespoon olive oil. (For pasta to cook properly, there needs to be a large amount of rapidly boiling water. The pasta should “toss about” in the water as it cooks). Let pasta cook about 3-5 minutes, until tender but firm. Drain pasta and set aside.
Heat remaining olive oil in a large skillet over medium heat. Sauté garlic, stirring constantly, until garlic is tender, about 1 minute. DO NOT let garlic brown.
Add shrimp to skillet and cook for 4-5 minutes or until just beginning to pink. Remove shrimp from skillet and set aside.
Add diced tomatoes, wine, parsley and basil to skillet. Continue to cook, stirring occasionally, until liquid is reduced by half, about 10 minutes.
Return shrimp to skillet. Add pasta and toss until pasta and shrimp are heated through, about 2-3 minutes.
Place Pasta on a serving dish. Grate Parmesan Cheese over dish and serve immediately.
