Pink Ladies – Round Two

Pink Ladies came into my single life (back when dinosaurs ruled the world), when a few ladies were stopping by my apartment for a girl’s night in. I wanted to serve something pretty. Something that didn’t taste like “booze” (yuck!). The thought process when something like this: I like ice cream.  I like strawberries.  I like pink lemonade and whipped cream.  So why not mix it all in a blender with a lot of rum?  And so The Pink Lady was born.

Way back in January 2014, one of my first posting was to share my frilly cocktail drink that will knock you on your butt. These creamy, dreamy Pink Ladies pack a mean punch. Maybe it was timing of the original post (January isn’t the smartest time off the year to be posting milk shake style cocktails) or because I was new to the blogging world, whatever the reason, my Pink Ladies came and went without much attention. I thought it might be nice now that the days are warming, to give this awesome concoction a second look.

The combination of strawberries (for sweetness) and pink lemonade (with just the right amount of pucker-power) blended with vanilla ice cream would make a nice “virgin” drink. Add to that a healthy amount of rum, and you have a cocktail that is smooth as silk and oh so tasty – dessert in a glass. Just be careful, the rum will sneak up on you.

Pink Ladies
1 Liter Light Rum (more if desired)
½ Gallon Vanilla Ice Cream
1 Bag Frozen Strawberries
1 Can Frozen Pink Lemonade
Whipped Cream for topping
Fresh Strawberries, 1 for each drink
Assorted Glasses and straws, 1 for each drink

Place frozen strawberries and pink lemonade into a blender and puree. Add about half the rum and ice cream and blend until smooth. Add remaining ice cream and rum and continue blending until smooth.

Pour mixture into chilled glasses. Top with whipped cream. Garnish each glass with a fresh strawberry. Insert straw into glass and serve. (For shorter glasses, cut straws to fit).
