Way back in May 2014, I shared a different take on those frozen Taquitos – Beef Taquitos with Spicy Al Fredo Sauce. Rather than zapped in the microwave or baked in the oven serves as a snack with guacamole, why not serve Taquitos as a main-course meal? The original recipe used Beef Taquitos, and quickly became a family favorite for it’s easy preparation. Sometimes I plan to make them, but more often than not is became a fall-back meal. You know, when you have something special planned but life gets in the way. It’s of those handy suppers that doesn’t take much planning to pull off. Just keep a box of beef filled taquitos in the freezer, along with a package of good chorizo sausage and a jar of Alfredo sauce in the pantry.
Since then, I’ve tried the same recipe using Triple Cheese Taquitos. The Triple Cheese Taquitos brought a different overall dimension to the dish – a richer flavor, smooth and creamy with just enough kick from the chorizo to balance out all that cheesy goodness. I was surprised – one simple change, and it because a completely different dish. The family loved it – and I actually preferred the cheese rendition over the original beef filled Taquitos. This got me to thinking – what would Pork Taquitos bring to the plate? Would it be equally distinct? Would it be a rehashing of the Beef variety?
Naturally, I had to give it try – if for no other reason than to have answers. And answers I received – delicious answers. For one thing, the shredded pork filling stood out – much like the way a spicy shredded pork filling stood out in a taco shell. The flavor, the texture – this was distinctly a pork dish. And as such, it is good – very good.
Pork Taquitos with a Spicy Alfredo Sauce
1 Package 18-20 count FROZEN Pork Taquitos
1 lb Chorizo
1 Jar Alfredo Sauce
Preheat oven to 400-degrees
While oven is heating, brown chorizo meat in a large skillet. Break into small pieces as the meat browns.
Drain if necessary and return to pan over medium-low heat. Add Alfredo Sauce, stir to combine.
Heat until bubbling.
While sauce warms, arrange Frozen Pork Taquitos in a large casserole dish or enchilada platter.
Pour sauce over taquitos, place in oven and bake for about 25 minutes or until warmed through.
Served up with Super Easy Refried Beans and a pitcher of Lemonade, its a great weeknight supper.
