Sometimes timing is everything. Sometimes we need a side dish that is both flavorful and quick – as in it only takes a few minutes from start to finish. I’m generally not one to use a microwave for much more than warming up leftovers or a cup of coffee. Every once in a while, microwaves are a handy way to “cook”.
This is so quick, so easy . . . the broccoli can be trimmed, then “zapped” while your main dish is at rest. A perfect side to steaks that are tented and allowed to rest for a few minutes before serving. Or to serve with more complicated dishes that require your attention. Everything is cooked in a bag, making for an easy clean up. If plating the main entrée on individual plates, the broccoli can even be plucked from the bag with tongs and plated alongside the star attraction.
I’ve even zapped some broccoli to add to Old Fashioned Baked Potato with the Works for a complete “baked” potato meal.
Zapped Broccoli with Garlic & Lemon
1/2 lb Broccoli
1 Teaspoon Minced Garlic*
1 Tablespoon Butter, melted
1 tablespoon lemon juice
Cut broccoli into individual pieces. Place broccoli, garlic, butter, lemon juice & about 1 tablespoon water in a micro-wave safe plastic bag. Seal, leaving small gap to vent. Micro-wave on HIGH 2-3 minutes.
CAREFULLY open bag (it will be steaming hot) and empty into a serving dish. Toss and serve.
* NOTE: Minced garlic from a jar is fine. If using jarred garlic, increase to 1 1/2 teaspoons for more flavor.
