The first time I made this dish, I was a bit apprehensive. Chipotle and maple syrup together? Really? Yes, really! There’s just enough kick from the chipotle that you know it’s there, yet the maple syrup is your savior, taking the edge off just a bit. An added bonus is that sweet-salty sensation these beautiful chops impart.
This is so easy to make, perfect for our hectic, busy, not-enough-hours in the day lives. While the recipe calls for a grill-pan (you know, a skilled with a grill bottom), you could make it in any skillet. The beauty of a grill pan (besides the obvious – those beautiful grill marks) is that the food is elevated just enough to keep things lean and clean. I love mine, especially for making foods that belong on a grill – like pork chops or steaks.
Chipotle-Orange Glazed Pork Chops
3 tablespoons maple syrup
3 tablespoons orange juice concentrate
1 1/2 teaspoon chipotle
4 (3/4-inch thick) center cut pork loin chops (about 8 ounces each)
1/2 teaspoons salt
In a small bowl combine the maple syrup, orange juice and chipotle.
Preheat grill-pan over medium heat. Sprinkle both sides of the chops with salt. Brush 1 side of chops generously with glaze. Place on grill-pan glaze side down. Brush other side with glaze.
Cook 8-10 minutes per side over medium heat or until cooked through, juicy and no longer “pink”.
